Low Carb Tempeh Bowl with Konjac Noodles and Tahini Dressing

(for 1 serving)

Ingredients Bowl:

  • 200g tempeh

  • 200g konjac noodles

  • 50g lettuce

  • 50g broccoli sprouts

  • 100g cucumber

  • 50g tomatoes

  • 1 tbsp sesame oil

  • 1 tbsp soy sauce

  • Salt & pepper

  • Ground coriander

Ingredients Dressing:

  • 50g tahini

  • 50g water

  • 15g mustard

  • Juice of half a lemon

  • Salt & sweetener to taste

Preparation:

  1. Mix all the dressing ingredients together.

  2. Wash and chop the vegetables.

  3. Cook the konjac noodles according to the package instructions and rinse them.

  4. Cut the tempeh into cubes and quickly sauté with sesame oil, soy sauce, and spices.

  5. Arrange everything nicely in a bowl and enjoy!
