Vegan Burgers for Food Lovers

 

Vegan burgers that even meat lovers will enjoy! 🌱

In this recipe, I'll show you how to create the ultimate vegan burger that will definitely impress even your skeptical friends. We’re making juicy high-protein black bean patties, a delicious homemade burger sauce based on vegan mayo, and irresistible caramelized balsamic onions. 😋

Assemble the burger however you like. I love to use crisp lettuce, vegan cheese, pickles, and fresh tomatoes along with the patties, sauce, and onions. 🍔

 


Recipe: High Protein Bean Patties

(makes 8x 200g patties)

Ingredients:

  • 1000g beans, canned or cooked

  • 100g oats

  • 250g mushrooms

  • 1 red onion

  • 50g walnuts

  • 3 tbsp flaxseed

  • 3 tbsp soy sauce

  • 3 tbsp fresh thyme, leaves only

  • 2 tbsp BBQ sauce

  • 1 tsp cumin

  • 1 tsp smoked paprika

  • 1 tsp pepper

  • Good pinch of salt

Preparation:

  1. Soak 3 tbsp ground flaxseed in 9 tbsp water for 10 minutes to create a "flax egg."

  2. Finely chop the mushrooms and onion, sauté in a pan, and deglaze with soy sauce. Reduce well.

  3. Pick the thyme leaves and coarsely chop the walnuts.

  4. Blend the beans with the spices, thyme, and BBQ sauce in a food processor until smooth.

  5. Add the sautéed mushrooms and onions, the flax egg, and chopped walnuts to the bean mixture and mix well.

  6. Add the oats to thicken the mixture and mix thoroughly.

  7. Optionally, let the mixture sit for a few hours or overnight to allow the flavors to meld.

  8. Form patties and bake at 200°C (convection) for about 20 minutes. Alternatively, brush with oil and grill or fry in a pan.

Nutritional values (per patty):

  • 314 kcal

  • 15g protein

  • 50g carbohydrates

  • 7g fat


Recipe vegan Mayo

Ingredients:

  • 125ml (or 1/2 cup) aquafaba (the liquid from canned chickpeas)

  • 1 tbsp chickpeas

  • 1 tbsp lemon juice

  • 1 tsp mustard

  • 1 pinch of salt

  • 250-350ml sunflower oil

Preparation:

  1. Blend all the ingredients except the oil for about 10 seconds.

  2. Gradually add the oil while blending until the mixture becomes a thick, smooth mayo. The more oil you add, the thicker it will become. Make sure the mixture doesn’t get too warm, or it won’t emulsify properly, and you’ll have to start over!


Recipe vegan Burger Sauce

Ingredients:

  • 6 tbsp vegan mayo

  • 1 tbsp Sriracha

  • 1 tbsp ketchup

  • 1 tsp mustard

  • 1 tbsp white vinegar

Preparation:

  1. Mix all the ingredients together until well combined.


Recipe: Caramelized Balsamic Onions

Ingredients:

  • 3 red onions

  • 3 tbsp sugar

  • 100 ml balsamic vinegar

  • 2 tbsp olive oil

Preparation:

  1. Slice the onions into thin half-rings and sauté them over medium heat in olive oil.

  2. Once the onions start to become translucent, add the sugar and let them caramelize.

  3. Deglaze with balsamic vinegar and reduce the liquid. The longer you let it cook, the better the flavor will be.
