Moist High Protein Chocolate Muffins

 

Hey everyone, today I'm going to show you an easy recipe for the perfect vegan snack on the go: moist high-protein chocolate muffins. I love having snacks like these ready when I go hiking, biking or spend the whole day out. These muffins are perfect because they're compact, provide lots of energy and protein, and won't melt or make a mess. Plus, they're super healthy, completely sugar-free, and super quick and easy to make. These moist muffins also make a great post-workout snack 🧁

 


Recipe

(Makes 18 small muffins)

Ingredients:

  • 100g oats

  • 25g flaxseeds

  • 100g protein powder

  • 30g cocoa powder

  • 1 tsp baking powder

  • 1 can white beans, drained

  • 400ml soy milk

  • 100g dates

  • 50g plant-based oil with butter flavor or coconut oil

Preparation:

  1. Blend oats and flaxseeds into flour using a mixer, then transfer to a bowl.

  2. Combine the flour, baking powder, protein powder, and cocoa powder in the bowl.

  3. Blend the dates, beans, and soy milk in the mixer, then add to the bowl.

  4. Add the plant-based oil and mix everything into a batter (avoid over-mixing).

  5. Pour the batter into muffin molds and bake in the air fryer at 160°C for 10-15 minutes, in the oven at 180°C.

  • 122 kcal

  • 8g protein

  • 11g carbohydrates

  • 4g fat
