Low Carb Vanilla Chia Pudding with Raspberries

(for 1 serving)

Ingredients:

  • 60g chia seeds

  • 400g unsweetened soy milk

  • 100g raspberries

  • 1 tsp vanilla extract

  • Sweetener to taste

Preparation:

  1. Place the chia seeds in a bowl and mix them with the soy milk, 1 tsp vanilla extract, and sweetener to taste.

  2. Transfer the mixture into dessert glasses or a sealable container. Let it sit in the fridge for at least 2 hours or overnight to thicken.

  3. Before serving, mash, puree, or simmer 100g raspberries with 1 tsp sweetener.

  4. Take the chia pudding from the fridge and evenly pour the raspberry sauce on top. Enjoy! For an extra touch, garnish with coconut flakes if desired.
